{"id":118,"date":"2012-03-28T21:03:36","date_gmt":"2012-03-28T21:03:36","guid":{"rendered":"http:\/\/www.vartanutrition.com\/site\/?p=118"},"modified":"2012-03-29T16:40:08","modified_gmt":"2012-03-29T16:40:08","slug":"spiced-roasted-yams","status":"publish","type":"post","link":"http:\/\/www.vartanutrition.com\/site\/2012\/03\/spiced-roasted-yams\/","title":{"rendered":"Spiced Roasted Yams"},"content":{"rendered":"<p><em>Cardamom and cumin make this dish a very savory surprise.\u00a0 Serve it with a sweet dipping sauce (such as the Sweet Cinnamon-Maple Dipping Sauce) to create a delightful mixture of sweet and savory. \u00a0Try this recipe with a variety of other root vegetables such as carrots, potatoes, sweet potatoes, rutabaga and turnips.<\/em><\/p>\n<p>Preparation time:\u00a0 45 minutes<br \/>\nMakes 2-3 servings<\/p>\n<p><strong>\u00a0 \u00a0 \u00a01\/2 teaspoon ground cardamom<\/strong><br \/>\n<strong>\u00a0 \u00a0 \u00a02 teaspoon whole dried cumin<\/strong><br \/>\n<strong>\u00a0 \u00a0 \u00a02 teaspoon salt<\/strong><br \/>\n<strong>\u00a0 \u00a0 \u00a01 teaspoon pepper<\/strong><br \/>\n<strong>\u00a0 \u00a0 \u00a04 tablespoons olive oil<\/strong><br \/>\n<strong>\u00a0 \u00a0 \u00a02 medium diced yam<\/strong><\/p>\n<p>Heat oven to 400 degrees Fahrenheit.\u00a0 Combine the cardamom, cumin, salt, pepper and olive oil in a bowl and mix well.\u00a0 Mix in the yams to completely cover the yams in the mixture.\u00a0 Place the yams in an oven pan, making sure that the yams cover the whole bottom of the pan in one single layer.\u00a0 Roast them for 30-45 minutes or until the yams are soft and easy to smash with a fork.\u00a0 Flip the yams half way through roasting to heat evenly.\u00a0 Serve warm.<\/p>\n<p>&nbsp;<\/p>\n<p>Copyright 2011, K.
