Spiced Roasted Yams

Cardamom and cumin make this dish a very savory surprise.  Serve it with a sweet dipping sauce (such as the Sweet Cinnamon-Maple Dipping Sauce) to create a delightful mixture of sweet and savory.  Try this recipe with a variety of other root vegetables such as carrots, potatoes, sweet potatoes, rutabaga and turnips.

Preparation time:  45 minutes
Makes 2-3 servings

     1/2 teaspoon ground cardamom
     2 teaspoon whole dried cumin
     2 teaspoon salt
     1 teaspoon pepper
     4 tablespoons olive oil
     2 medium diced yam

Heat oven to 400 degrees Fahrenheit.  Combine the cardamom, cumin, salt, pepper and olive oil in a bowl and mix well.  Mix in the yams to completely cover the yams in the mixture.  Place the yams in an oven pan, making sure that the yams cover the whole bottom of the pan in one single layer.  Roast them for 30-45 minutes or until the yams are soft and easy to smash with a fork.  Flip the yams half way through roasting to heat evenly.  Serve warm.
